You can cook some bacon, preferably on a George Foreman Grill (something to drain off the oils), add it to the other two ingredients and mix all of it with lite mayonnaise, then spread onto large washed romaine lettuce leaves. Roll the lettuce over the filling and enjoy!

The next one of the low carb chicken recipes is great if you love Teriyaki. Start out by making the marinade with a quarter cup dry sherry, a quarter cup low sodium soy sauce, a quarter cup pure water, 2 crushed cloves of fresh garlic, and a half teaspoon of fresh ground ginger. Bring the marinade to a boil in an adequately sized saucepan and allow it to cool (this boils off the alcohol). For a sweeter sauce, just add a quarter cup of Splenda into the mix.

For a stronger flavor, dice the chicken before marinading, and stir fry it in sesame oil or olive oil along with some chopped vegetables.
Chicken and Broccoli Crustless Quiche
1 chicken breast, cut into small pieces4 oz broccoli2 oz onion, chopped6 eggs1 cup heavy cream6 oz cheddar cheese, shreddedSalt and pepper
Preheat the oven to 350 degrees F. Chop fresh broccoli florets into small pieces in a food processor or by hand and steam for 5 minutes. Beat the eggs, slowly adding in the cream. Grease a large casserole bowl, put in the chopped onion, steamed broccoli, shredded cheese, and seasonings. Pour in the egg and cream mixture over the rest of the ingredients. Cook for approx 40 minutes until golden brown on top. When it is done, a knife pushed into the middle should come out clean.
Remember that if you are following the Atkins diet, you can also create your own style of any kind of fried chicken recipe by frying chicken pieces, including the skin in oil, flavored with spices. Try not to include bread or processed fried chicken coatings unless you have verified that they have low carbohydrates or, even better, are carbohydrate free.
