Here are Examples of Low Carb Chicken Recipes to Help With Your Meal Planning:

Chicken Bacon Lettus and Tomato Sandwich

If you are looking for something light for your lunch bag, try a Chicken BLT sandwich, without the bread of course. To make this simple recipe, cut cooked chicken breast (not dark meat) into small cubes and chop the tomato. You can cook some bacon, preferably on a George Foreman Grill (something to drain off the oils), add it to the other two ingredients and mix all of it with lite mayonnaise, then spread onto large washed romaine lettuce leaves. Roll the lettuce over the filling and enjoy!

You can also use the lettuce wrap idea for other low carb sandwiches or hamburgers.

Teriyaki Chicken

The next one of the low carb chicken recipes is great if you love Teriyaki. Start out by making the marinade with a quarter cup dry sherry, a quarter cup low sodium soy sauce, a quarter cup pure water, 2 crushed cloves of fresh garlic, and a half teaspoon of fresh ground ginger. Bring the marinade to a boil in an adequately sized saucepan and allow it to cool (this boils off the alcohol). For a sweeter sauce, just add a quarter cup of Splenda into the mix.

Take two raw chicken breasts and marinade them in the refrigerator in the sauce for at least two hours. Be sure to poke the meat with a fork while in the marinade so it is pushed into the meat. After the two hours, remove the chicken from the marinade and grill them, basting the chicken every five minutes after each flip being very careful not to burn it. Serve the meal with stir fried vegetables with olive oil.

For a stronger flavor, dice the chicken before marinading, and stir fry it in sesame oil or olive oil along with some chopped vegetables.

Chicken and Broccoli Crustless Quiche

Cook for approx 40 minutes until golden brown on top. When it is done, a knife pushed into the middle should come out clean.

Remember that if you are following the Atkins diet, you can also create your own style of any kind of fried chicken recipe by frying chicken pieces, including the skin in oil, flavored with spices. Try not to include bread or processed fried chicken coatings unless you have verified that they have low carbohydrates or, even better, are carbohydrate free.
